A higher activity NP catalyst for hydrogenation was prepared, on which behenic acid was produced by erucic acid hydrogenating. Physicochemical properties and functional characteristic of Reduced-calorie fats containing behenic acid are similar to the natural fats and oils. Due to the poor absorption of behenic acid the caloric availability of fats is reduced. 含山嵛酸低热量油脂的理化性质和普通油脂类似,其中所含山嵛酸不易被人体吸收,大大降低了油脂的热量。
